Gome Skillet
Eating breakfast seems to make a huge difference for me through most of the day. My energy and mood both do a lot better. I think I’d be better off eating the most at breakfast and less at dinner.
Unfortunately, I tend to get up a bit late a lot of time, and then either miss breakfast or eat something small. Lately, I came up with something high-calorie and delicious I can cook quick in the morning to get a good start on the day.
As in my previous recipe, everything is approximate and I encourage you to experiment to come up with something you like better. I have a few techniques I like to use when I make it, but to keep the recipe steps short and clear, I’ll list them here:
- You can prepare a big batch of tater tots and keep them in the fridge so you have some on hand for multiple mornings in a row. Just heat them up in the microwave so they don’t impede the cooking of the eggs. In fact, try to get them fairly hot (maybe 1 minute or 1:20 on high).
- The eggs will get scrambled, but if you put them in the pan with unbroken yolks and then scramble just the whites for a bit, you’ll get a nice heterogeneous mixture of yolk and white in the final product.
Ingredients
- 1 tbsp. butter
- 3 eggs
- 2 cups tater tots, cooked
- 1 tsp. pepper
- salt, to taste
- ¼ cup shredded cheese, cheddar or mozzerella
- Sriracha sauce (optional)
Instructions
- Heat butter on medium heat in a skillet or pan.
- When the butter just starts to bubble, add the eggs.
- Keep the eggs moving, gradually scrambling them.
- Add the tater tots after maybe 30 seconds.
- Cook eggs for about another minute or until they look almost cooked through.
- Add pepper & salt, then cheese.
- Remove from heat and mix those ingredients in.
- Top with Sriracha and serve hot.
